Carrageenan traits

It is white or light yellow powder, odorless and odorless. It is completely dissolved in hot water above 60 ℃ and insoluble in organic solvents. It has the best stability at pH9. It can be heated at a high temperature above pH6, and acid hydrolysis will occur at a temperature below pH3.5. In the presence of potassium and calcium ions in the aqueous solution, reversible gels can be formed.
